beach time & a giveaway!!

My trend this week seems to be lazy, as in not getting ready or getting ready half way ready. I will be spending my summer days at the beach from now until the end of August. You can check out my home town of Vernon here in the Okanagan Valley in BC, Canada. It has been rainy rainy, but starting tomorrow it is 95 degrees and sunny which means time for floating on the lake + strongbows on the dock!
I have desperately been trying to grow my hair long this past year. Not just long but healthy + super long. Summer is all about the season to look effortlessly put together... as in naturally beautiful. Long hair, natural glow, perfect lips, you get the idea. Well for me it is not natural so here is what I use to get that "natural" look. (Yes, I have to still get ready to look like I'm not ready. No logic what-so-ever but I was not genetically blessed like some others)

casual yet chic

Classic white jeans and a light button up is the perfect early summer outfit. For those stormy days (unfortunately not in Arizona or any other place over 110 degrees) but for those of us lucky enough to avoid that heat we are also the people who experience nights where it can be a little chilly. White jeans,   floral pants, or palazzo's all scream summer because of their bright casual fun look. The button down shirt is a staple item in my summer wardrobe whether I am at the lake, running around town, or chilly at night I throw it on over my b suit, crop tops, or under a sweater. I try to dress a little causal yet chic when running errands around town (you know in case I run into someone special) so I pair my outfit with these LULUS.COM sandals. They are a little dressier that regular old flip flops but not trying too hard like wedges. I love these because of their zipper on the back so you don't actually have to fuss with the buckles.  

On a side note, I am looking for a hot pink or neon pink nail polish! Anyone have any ideas of brands or where I could get such a color? Thanks dolls!

coconut chicken & Brussels sprouts recipe

I dont necessary love cooking but I love eating healthy and I am probably one of the pickiest eaters around. I have recently been introduced to Paleo in the past month or so and have become highly fascinated with it. It has lots and lots of rules and I don't follow them all but I have been trying to doing better! The past two nights I have been a slave to my kitchen and here is what I prepared:

I love coconut everything (could be my years in Hawaii, or natural sweet tooth) so when I came across this coconut chicken recipe I rushed to the store and made it immediately!
coconut chicken: 
+ 1 lb of chicken breast
+ 1/4 cup of almond flour
+ 1/4 cup of unsweetened shredded coconut
+ 1 egg
+2 tbs of coconut oil
1/8 tsp of sea salt
mix flour, coconut, and salt in a bowl. beat the egg in a separate bowl. dip chicken into the egg, then dip into flour mixture, then fry in a large skillet for 30 mins!  I sautéed a few colored peppers in olive oil as a side dish. 


Who hates Brussels sprout? Correct answer is any kid who was forced to eat them! Every Christmas dinner my mom made me eat at least one Brussels sprout... sick! Then I was out to dinner at a friends house and she asked if I liked Brussels sprouts.... my answer.... hummm no thank you. Well since it was already on the menu I put my big girl pants on and ate them. AMZING! Seriously these are not the same ones your mom forced you to eat they are delicious, I had seconds! 
Brussels sprouts: 
+ 4 cups of quartered Brussels sprouts
+ 4 stripes of cup up turkey bacon
+ 2 tbs of diced shallots
+ 1/4 cup of golden raisins
+ 2tsp olive oil 
+ 1/2 cup of chicken broth 
add oil, shallots, and bacon to large skillet. cook for 5 mins, then add Brussels sprouts and continue to cook for 15 mins stirring so they don't get burned. then add raisins and chicken broth and cook for another 3 mins.  I popped some (non Paelo, but natural) salmon in the oven and dinner was served!

Summer days are lazy days for me. They are the days I want my hair to grow long (so I refuse to do anything to it until I absolutely have too, aka I need to take outfit photos!) my make up is a little bb cream, mascara, and pink lip pop, and my outfits are nothing short of comfy. I am loving the jean vest trend this summer, pretty much my go to for every single outfit which in turn makes me feel like I am putting some sort of energy into getting ready.

road trip

What you seem to learn on road trips:


+ Always make sure you have gas in your car and it stays above a quarter of a tank! I usually like to take my chances with gas trying to see just how far I can go on one tank, until this trip. I learned my lesson!! Imagine your gas light comes on & you are in the middle of nothing.... insert slight anxiety attack, turn off all AC, and pray to god a station will be coming soon!

+ Taking photos through your windshield is great, if only no bugs are smeared all over it because then you have a big dot in the middle of every pic!
+ Finding new apps like STATE FRAME is the perfect way to waste a little bit of time so those hours go by faster! Up loading to INSTAGRAM is great if you have service, if not it's very frustrating! 

+ Having a car charger for your iPhone is a must! 

+ Utah is amazingly beautiful! I always get this weird feeling that I am on a set right out of the movies. Salt Lake is probably one of my fav cities to date!
+ Meeting blogger friends along the way is the best feeling! I met Gentri for dinner at one of Utah's fav restaurants Costa Vida (which I didnt realize they had one on every corner!) we both had the pork salad & I was overly satisfied! We sat and chatted for over 3 hours, when we both got cold and realized it was almost 10:30pm. Sometimes you just click with someone! 

+ I stayed away from my Starbucks + stuck to red bull.  I am positive it is not any better for me, but I justified it anyways. 

+ I have never been to Idaho (thats not true, I drove through Coeur D'Alene last year) but have never been through more than 10 mins of Idaho. I was excited to see something new!

+ I have a slight obsession with Jimmy Johns. Seriously obsessed. I was craving JJ's the whole trip so I googled and found 1 JJ's in Boise. Eeeeek how exciting, my life is now complete! I also needed a BofA and a Target so this will be a great little stop. JJ's was right down on Capitol Street (which I didn't realize was in heart of downtown) but I didn't care I wanted it! I got my #6 and sat in the Capitol Park and enjoyed my little break from driving. 
 + The second I drove into Oregon it started raining.... go figure!

+ Speaking of Oregon, I always forget they pump your gas for you. Full service, I am not sure if it is the law or not but I always forget, then the attendant comes over and the situation just gets awkward!
+ Audiobooks are lifesavers on road trips! I have 4 or 5 books, all ranging from 5hrs-11hrs which is perfect to distract you from how long your butt has been sore for. 

+ This is not intended to offend anyone at all, however I always have the weirdest experiences in Washington. The people I run into are just not on the same page. Maybe it's the small remote towns I have been too, but something always happens where I want to pull my hair out!! 
+ Road trips in general are always an experience! They help you learn about yourself, others, clear your brain, make you no longer want to eat fast food or drink another red bull, usually you discover a new fav candy, and most importantly you have a million of the same pics on your iPhone!

Last night was probably one of the most exciting nights of my life.... Danielle Bradbery won the Voice!! Yes, I understand this is sad that my excitement comes from a TV show, I am working on that part of my life, but none the less I was super excited for her!! 

I am spending the day getting ready to go on a little trip! I have caught the travel bug and all I want to do is see everywhere and try everything! Travel is the only expense that makes you richer. Being a single twenty something year old girl, it is time to grab life, get out of my comfort zone, and see what the world has to offer. I will unleash a little more about this as the weeks progress so stay tuned!

Welcome to Tuesday, official day of hangover TV! I mean I watched 5 freaking hours of TV last night, not just so I can blog about it but because I really enjoy sitting on the couch watching this entertainment. Real Housewives, theVoice and of course all time fav The bachelorette! 

Speaking of miss Des herself, I am honored to host the link up for Meg & Kasey weekly Bachelorette re-cap!
So lets re-cap shall we:
+ I official dislike Ben but all these dudes need to get over it and stop worrying about him. They are focusing too much on hs douchi-ness
+ Jaun Pablo = sexual! 
+ I liked Brad but seriously bores and snores. I am sure he will find a nice girl someday he just might wanna work on jump starting his personality!
+ Zach W was adorbs with that song.  I really like him now, he is one of my projected last man standing - I'm not sure about the winner but he will go far.
+ Jame's date was touching but I am not too sure I am sold on him yet
Cant wait to see what comes next week....Germany here we come!

The final performances of the Voice was tonight as well.  My vote is still Miss Danielle Bradbery! Tomorrow night can not come quick enough!!!
